Gluten-Free Peanut Butter Chocolate Chip Cookies

¼ tsp. salt
1 large egg white
1 c. chunky peanut butter
1/3 c. granulated sugar
¼ c. brown sugar
¼ c. semi-sweet mini chocolate chips
Place salt and egg white in a medium bowl and stir with a whisk until frothy. Add peanut butter, sugars and chocolate chips, stirring to combine.
Divide dough into 20 equal parts placing them on a parchment-lined baking sheet. Put the tray in the freezer for 5 minutes. After taking them out of the freezer, roll each part into a ball. Gently press the top of the cookie with a fork to flatten it. Bake at 375° for 10 minutes or until lightly browned.
