Lemon Chicken & Asparagus Stir-Fry

½ Tbsp. olive oil

2 boneless, skinless chicken breasts, sliced

1 tsp. kosher salt

½ tsp. freshly ground black pepper

1 Tbsp. minced garlic

4 oz. asparagus

½ lemon, zested, plus more for garnish

½ lemon, juiced

3 Tbsp. soy sauce

Cooked rice, for serving

Season chicken with the salt and pepper. Heat olive oil in a large pan over medium-high heat. Add the chicken and stir-fry until no longer pink on the outside, about 4 minutes. Add the garlic and continue cooking until the chicken is cooked through, about 4 minutes more.

Add the asparagus, lemon zest and lemon juice and toss to combine. Cook until the asparagus is tender, about 2 minutes, then stir in the soy sauce. Serve stir-fry over rice with more lemon zest on top. —3 servings.
