Maple Cinnamon Roasted Sweet Potatoes

3 c. peeled sweet potatoes (about 2 large sweet potatoes), chopped into larger 1" bite-sized pieces
2 Tbsp. extra-virgin olive oil
2 Tbsp. pure maple syrup
½ tsp. salt
¼ tsp. pepper
¼ tsp. nutmeg
¼ tsp. cinnamon
Heat oven to 425°. Prepare a sided cookie sheet by lining with parchment paper or tin foil, and spray with cooking spray. Combine the chopped sweet potatoes, olive oil, maple syrup, salt, pepper, nutmeg and cinnamon in a mixing bowl. Stir together until well coated. Pour onto the prepared cookie sheet, spreading out potatoes out to ensure that none are touching. Bake for 15-20 minutes. Stir the potatoes halfway through cooking time. —6 servings.
