Tater Tot Bombs

16 frozen tater tots, room temperature

16 (¼") cubes sharp Cheddar cheese

8 slices bacon, halved

2 Tbsp. brown sugar, packed

1 Tbsp. fresh parsley leaves, chopped

Preheat oven to 400°. Line a baking sheet with parchment paper or a silicone baking mat. Wrap 1 of the tater tots and 1 of the cheese cubes with 1 of the bacon pieces. Secure the bacon with a toothpick. Repeat until the remaining tater tots and the remaining cheese cubes are wrapped in the remaining bacon.

Add the brown sugar to a shallow bowl, then dredge each of the wrapped tater tots in the brown sugar, pressing slightly to coat. Place tater tots, seam-side down, on the prepared baking sheet. Bake, flipping them once halfway through, until the bacon is crisp, about 20-25 minutes. Serve garnished with the parsley. —4 servings.
