Sweet Potatoes with Marshmallow Creme

3 c. sweet potatoes, cooked
1 c. white sugar
½ c. melted butter
3 large eggs
1/3 c. milk
1½ tsp. vanilla extract
7 oz. jar marshmallow creme
Preheat oven to 350°. Grease an 88 baking dish. Run the 3 cups of cooked sweet potatoes through a ricer, food mill, or fine mesh sieve or colander. Stir in the rest of the ingredients by hand—except marshmallow creme. Pour into baking dish and then top with marshmallow creme. (The marshmallow creme will come out of the jar easier if you microwave it for just a couple of seconds—NO longer or you will have a marshmallow volcano!)
Bake until puffy, about 25 minutes. —8 to 10 servings.
Tip: To roast sweet potatoes, use a fork to poke holes in each potato and bake in a 425° oven for about 40 minutes or until tender.
