Grilled Chicken Thighs

1 lb. chicken thighs, bone in or boneless
Marinade:
¼ c. olive oil
1 Tbsp. red wine vinegar
1 lemon, zested and juiced
4 cloves garlic, grated or minced
2 tsp. honey
1 Tbsp. dried oregano
1 tsp. onion powder
1½ tsp. kosher salt
½ tsp. black pepper
In a medium bowl or measuring cup, whisk together the marinade ingredients. Place the chicken in a large ziploc bag or casserole dish, and pour in the marinade. Allow chicken to marinate in the fridge for at least 30 minutes; overnight is best.
Once ready to cook, remove chicken from the refrigerator and allow it to sit on the counter for 20 minutes. Preheat your smoker or pellet grill to 400°. Grill thighs for 15-20 minutes, or bone-in chicken thighs for 30-35 minutes, until cooked through. Remove from the grill and set aside to a clean plate. Tent with foil and allow to rest for 5 minutes before slicing and serving. —4 servings.
