Maple Brown Sugar Turkey Breast

1 turkey breast any size, bone in or boneless
1 to 2 Tbsp. olive oil
Salt and pepper to taste
1/3 c. maple syrup
2 Tbsp. brown sugar
2 Tbsp. Dijon mustard
¼ tsp. ground sage
¼ tsp. dried thyme
Splash of balsamic vinegar
Preheat oven to 350°. Rub the turkey breast with olive oil and season with salt and pepper. Place turkey breast in a roasting pan and cook according to weight and package directions until internal temperature reaches 165°.
Meanwhile, in a small sauce pan over medium heat, combine maple syrup, brown sugar, Dijon mustard, sage, thyme, vinegar and salt and pepper, to taste. Bring to a simmer and cook until thickened slightly.
About 1 hour before turkey is done, begin basting with glaze, about every 20 minutes. If desired, brush turkey with glaze one final time after removing from oven. Let turkey stand for 10-15 minutes before slicing and serving. —8 to 12 servings.
