St. Patrick's Day Crinkle Cookies

1 French vanilla cake mix (or can use a white cake mix)
2 eggs
1 tsp. vanilla extract
8 Tbsp. butter (1 stick), melted
Green food coloring (about 50 drops, depending on how green you want them)
1 c. powdered sugar
1 tsp. cornstarch
Green crystal sugar
Blend cake mix along with the eggs, vanilla and butter till well combined. Add food coloring and mix thoroughly. Refrigerate at least 30 minutes (this will keep them from spreading too much when baked).
Mix the powdered sugar and cornstarch together.
Scoop dough out with small scoop or teaspoon, and roll in powdered sugar. Place on prepared baking sheet about 2" apart. Sprinkle with green sugar.
Bake 9-10 minutes. Let cool for a minute after baking on tray before moving to cooling rack.
