1½ lbs. lean ground beef
2 eggs
½ c. milk
1/3 c. fine dry bread crumbs
¼ c. grated Parmesan cheese
¼ c. chopped parsley
1 tsp. salt
½ tsp. freshly ground pepper
2 Tbsp. olive oil
In medium bowl, combine beef, eggs, milk, bread crumbs, Parmesan cheese, parsley, salt and pepper. Mix well with your hands to blend. Wet hands to prevent sticking and using heaping tablespoons, shape into about 24 meatballs.
Heat a large skillet over medium-high heat. Add oil. Add meatballs, in batches, and cook until browned, turning occasionally, about 5-6 minutes per batch, reducing heat if necessary. Remove to paper towels. Serve with sauce of your choice. —6 servings.
